I’d be a liar if I said I didn’t spend the better part of my many daydreams sighing after a miracle to sweep me off my feet. Usually this miracle saunters up in the guise of a tall, gorgeous man with a charming smile and perfectly manicured fingers sweeping through wind-tossed dark bangs, but sometimes it’s a publishing contract for my new YA novel or–if I’ve been watching one too many interviews of The Hunger Games that night–an accidental bumping-into Josh Hutcherson on a local sidestreet.

Most miracles nowadays, however, are manufactured. I always feel like I’m cheating fate when I make my own miracles, sort of like how technology ruins romance for a 21st-century couple that yearns for destiny to bring them back together. Because let’s face it: Serendipity (2001) would never have happened had it taken place 10 years later, because John Cusack would have already Facebook stalked the bejeezus out of Kate Beckinsale’s character before Googling her employment history, contact info, and relationship status. Who needs phone numbers written on dollar bills when you have the internet?

In short, most modern-day miracles suck the fun out of romance. And don’t sit there shaking your head knowingly at me, because even as you read these words you’re secretly toggling to the browser tab that contains every Facebook picture that guy (or girl) you just met yesterday at the airport has ever uploaded. And if you aren’t doing it now, you have done it, or will be doing it, or both. And it’s probably not your first time, either.

I hold my own pretty well–better in some cases than in others. Just this Thanksgiving, I was at the airport along with hundreds of other straggling holiday travelers and finally snagged a seat at a crowded table full of disheveled but friendly-looking guys. Luckily for me, the guy sitting across the table was just leaving, so I had a spot to myself for a while and pulled out a pile of papers to grade before I got home. About 20 minutes into the process, the guy sitting diagonally across from me, who had apparently been watching me grade, asked with a smile if I was teaching an English course and grading lit papers. Turns out, he’s from my uni’s comp lit department and–as we quickly discovered–even knows quite a few folks from my department, including my advisor and classmates! We ended up carrying a 45-minute conversation, somewhat over the head of the guy seated next to me, who commented in brief amusement every once in a while and told us with a wry smile that he was glad we’d made a connection. The miracle of random connections: those I can do.

Others, not so much.

Maybe I entertain some false preconceptions of what miraculousness means in this day and age, but as a girl who grew up in the Disney Princesses Era, I’m particularly persnickety about making the first move. All’s fine and dandy when it comes to strangers–I really have no problem striking up a conversation with a random wayfarer–but throw me in a situation where I need to express interest before its mutuality is ensured, and I’ll clam up like an iron snare.

Of course, I realize this isn’t fair at all to the other party, which is why I’ve made a strong effort in the past year to take the initiative…in some situations, at least. For example, I’m getting reaaalllllly good at catching people’s eyes from across tables to encourage them to talk to me. I’m also really good at accidentally bumping into people I’d like to talk to, or asking them to watch my stuff for me while I go to the bathroom and then coming back and absentmindedly “noticing” something they’re working on.

And like, a load of other really weird tacit stuff that doesn’t really count as taking initiative. Like tonight while we were hanging out, my friends actually turned my name into a very: so to “Ala” someone now means to “friend-zone somebody without ever having been conscious of the fact that you had encouraged them into digging you in the first place.”

Self-awareness. It’s important, people.

We all want miracles to happen to us, when actually, as I’ve come to learn, one of the most fun parts about miracles is knowing that you played a part in ensuring their success. Oftentimes, the folks I keep in touch with are the ones with whom I had the determination and drive to simply follow up with, when the relationship would have hit a dead end from the start otherwise. To me, a dinner at that fun new restaurant we both talked about isn’t a date–it’s the chance to make a connection happen and to keep up the miracle of a connection in its own right. Because if you think about it, every connection IS a miracle. It’s a way of saying, Look at us, we didn’t know each other before and we know each other now. Look at us, we live in a world where in some places, nobody can trust anyone else, and yet here we are making this happen. Look at us, we are human beings and we are reveling in our ability to formulate meaningful relationships.

Because that’s really what’s at the heart of a miracle: a willingness to embrace unexpected occurrences in spite of all odds, in spite of everyone else telling you otherwise. Miracles happen, but the best kinds of miracles are the ones you know you’ve added to your personal list of successes.

And inevitably, you know where all this talk about miracles is going to lead us. Have I introduced you to these miraculous little cookies yet?

These coconut oil white chocolate + chocolate chip cookies really are tiny bite-sized miracles: the best kind of unexpected, even without any of the added butter and all that fatty jazz. With only coconut oil to hold them up, my friends were crazy surprised and CRAZY enthused about these cookies. They’re slightly crumbly but infinitely soft and chewy in texture…plus the addition of white chocolate + chocolate chips is always a huge plus. This is one jazzy way to wow your friends and bring back the meaning of miracles during the holiday season.

And okay, maybe I’m still waiting for the day when I’ll bump into Josh Hutcherson on the street and make an instant friend connection with him, but until then I’m focusing on things I can definitely make happen and that will keep the miracle ball rolling in my life. Who knows? Maybe if I bump into him while carrying around a batch of these bad babies, fate will be in my favor.

After all, anything can happen, right?

Coconut Oil White Chocolate + Chocolate Chip Cookies

Coconut Oil White Chocolate + Chocolate Chip Cookies

Move aside, butter! Coconut oil infuses these soft, chewy, crumbly cookies, lending them a unique texture that's chock full of healthy flavors perfect for any coconut + chocolate lover! Slightly adapted from Averie Cooks.

Ingredients

  • 3/4 cup melted coconut oil
  • 1 cup brown sugar
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 (3.5 oz.) instant vanilla pudding mix (not cook & serve)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup white chocolate chips
  • 3/4 cup semi-sweet chocolate chips
  • 3/4 cup sweetened dried coconut flakes

Instructions

  1. In a medium mixing bowl, beat together coconut oil, sugar, egg, and vanilla until well-combined.
  2. Add flour, pudding mix, baking soda, and salt. Mix in until just incorporated into wet mixture. At this point, your dough will look quite oily and dry.
  3. Fold in white chocolate, chocolate chips, and coconut flakes.
  4. Lightly grease a cookie sheet. Using your hands, form 1.5-inch balls of dough by squeezing and compacting the dry or crumbly bits. The dough will tend to fall apart, but keep at it! Slightly flatten each ball of dough (since the cookies will mostly retain their shape when baking), then cover baking sheet with cling wrap and refrigerate for at least 3 hours.
  5. Preheat oven to 350 degrees F. Transfer baking sheet with mounded dough into oven and bake cookies for 10-12 minutes, or until the tops and edges have just begun to set. Your cookie centers should feel slightly wiggly. Do not overbake! Remove sheet from oven and allow cookies to continue cooling on stovetop.
  6. Serve and enjoy!
