In no particular order, mine would be an inflatable armchair, the Backstreet Boys Millennium CD, my favorite pair of obnoxiously polka-dotted booger green tights, grilled cheese, and Kool-AidCan I get a hashtag #90sbliss?

(Especially for that sexy inflatable armchair–I owned a blue one like this. Cool kids? You bet your velvet bellbottoms and rainbow slinkies we were.)

Discovering Kool-Aid Easy Mix as an adult was like stepping into a time machine and being transported instantly back into the head-boppin’, teeny-bopper 90s – except this time, there was no irritated high school cashier to tell me off for refilling at the drinks machine wayyy too many times. I bought all three flavors from Walmart recently – cherry, tropical punch, and grape – and I may or may not have already sipped my way through an entire bottle on my own before I even got around to writing this post. Whoops? (Good thing it has 50% less sugar than comparable regular sodas, right?)

When you live in 90°F springtime California, though, it’s hard not to want to drink Kool-Aid all the time. You can probably imagine that Kool-Aid Easy Mix is kind of nirvana for someone like me: just add water and enjoy? Now that’s my kind of childhood throwback!

That’s not the only 90s throwback I’m sharing here today, though. As you can probably tell from the photos of gorgeous, oozing, melty, cheddary cheese that are flooding your lovely Tuesday monitor at this very moment (I’m sorry, did you say you’re at work and want to lick the whole screen right now? Yeah, I totally feel you), I’m sharing a salad recipe.

Just kidding. Grilled cheese roll-ups time, to pair off my glass of cherry Kool-Aid Easy Mix drink. Let’s doooo this!

My favorite part about making Grilled Cheese Rollups is that they are so frickin’ cute + dainty. I used to order a grilled cheese every single time I went to Denny’s with my family, but these bite-sized cheesy morsels take GCA (Grilled Cheese Addiction) to a whole new level. Because let’s face it, when you have a choice between delicious and deliciousINYOURFACEADORABLE, you’re going to go with the second every time.

On a related note, these are GREAT for bringing to parties. Pool parties. Dinner parties. Birthday parties. Parties to celebrate April a.k.a. National Grilled Cheese Month, which is apparently a real thing.

And like my cup o’ super-convenient Kool-Aid, these bad babies are so easy to whip up. I’ve included some fun sped-up, step-by-step gifs that detail the assembly process, but essentially you slather light mayonnaise on all surfaces of your bread, top each slice with a huge slab of cheddar cheese (or cheese of your choice), heat the bread over low heat in a pan until your cheese is to-die-for-gooey, slice everything up, and you’re ready to roll.

That was a such a cheesy pun, but I did mean that literally. Roll roll roll!

Grilled Cheese Rollups

Celebrate the sunny days with a quintessential American classic-with-a-twist: grilled cheese rollups! These cute bites make a perfect, portable food for any beach outing or party – just pair with Kool-Aid and you've got a picnic made!

Ingredients

  • 2 slices bread (I prefer Hawaiian sweet bread)
  • 2 tablespoons mayonnaise
  • 1-2 large slice extra sharp cheddar cheese, or cheese of your choice

Instructions

To make traditional grilled cheese sandwich:

  1. Spread half a tablespoon of mayonnaise on both sides of two slices of bread. Top one slice of bread one slice of cheese.
  2. Heat a large pan over medium heat. Place bread in pan and cook until bottom turns golden brown, and cheese has begun to melt. Flip over and continue cooking until other side turns golden brown. (My sandwiches took approximately 3 minutes on each side.)
  3. Serve immediately and enjoy that gooey cheese!

To make grilled cheese rollups:

  1. Spread half a tablespoon of mayonnaise on both sides of two slices of bread. Top both slices of bread with one slice of cheese each. Place bread, cheese side up and mayo side down, on pan, and lower heat to a low flame. Cook until bottom of bread has begun to turn golden brown, then briefly flip over the bread so that cheese is directly on pan. Heat for 15-20 seconds, until cheese has begun to melt. Remove to a cutting board, cheese side up.
  2. Divide each slice of bread into three long strips with a knife. Start at the end of each long strip and roll the bread tightly into a spiral. Repeat until all bread is finished. You may use a toothpick to hold the spiral together on a serving platter.

  4. Yay! Backstreet Boys CD, Kool-Aid and grilled cheese. Indeed sounds like the 90s. I must say that I really miss the 90s – the songs, our oldie goodie foods… aaahhhh! I wish we could go back to those times. Back to the grilled cheese, this is incredibly delicious. I don’t mind having grilled cheese sandwich everyday. Haha!

    The five objects that represent my childhood, orange cordial/fruit drink icy poles, mashed potato, my coloured pencils, Pilly my pillow (I had that pillow with me always) and eggs. I was so sophisticated. 🙂

  12. Oh man, my 5 favorite things from childhood? Hmmm. 1) Old school Nintendo. 2) Hammer pants 3) Mix tapes 4) Starter jacket and 5) mini-powdered sugar doughnuts. (Yup, I ate my weight in those things watching Saturday morning cartoons. Back when cartoons weren’t lame like they are today! Hah!) I love this post, Ala!!
