For Heart Health Month this February, I partnered up with Mazola Corn Oil to create a better-for-you version of one of our (and soon to be your) favorite snacks: banana bread! As an athlete, heart health is kiiiiind of important to me–and that’s exactly where this Better-for-You Banana Bread comes in. It’s lightened up in all the right ways to achieve the perfect blend of subtle sweetness. I started with one of my favorite banana bread recipes but immediately swapped out Greek yogurt for the sour cream, white whole wheat flour for all-purpose, and Mazola Corn Oil for butter. And guys, this recipe convinced me that I am never making banana bread with butter again, because the texture of this bread is absolutely jaw-dropping. A moist, chewy center embraced by perfectly crisp edges (which I’ve never achieved on a loaf like this before)–from here on out, this is the ONLY way I’m making my quick breads! Did I mention it only takes 10 minutes to throw together and into a pan, too? I mean, just check out that perfect, dense, moist crumb! Be still, my beautiful, wonderful healthy heart!

Better-for-You Banana Bread

Better-for-You Banana Bread

This Better-for-You Banana Bread is lighter but also mind-blowingly tasty! With a special crisp crust and a chewy center, this is the perfect easy recipe for a snack that will leave you feeling nourished and satisfied.

Ingredients

  • 3/4 cup white sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup Mazola® corn oil
  • 2 eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups white whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 overly ripe bananas, mashed
  • 1/2 cup Greek yogurt, vanilla or plain

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a 9x5-inch loaf pan and set aside.
  2. In a large bowl, cream together both sugars, corn oil, eggs, and vanilla extract.
  3. Add flour, baking powder, and salt. Gently fold into wet ingredients until just incorporated.
  4. Mix in mashed bananas and yogurt.
  5. Pour batter into prepared loaf pan and bake for 55-65 minutes, until a toothpick inserted in center comes out clean.
