Happy new year! Can I interest you in this creamy caramel flan?

While others are making big resolutions for 2017, I’ve been happily whiling away my hours in my fuzziest pair of snowflake pajamas and scarfing down the last of the shortbread cookies that I bought from Scotland. And making flan, apparently. I guess my resolution is to undo all of my hard fitness work from last year completely (for various reasons, I also haven’t been to the gym in a month). Hooray!

Just kidding. While I’m not a big fan of making lists based on Earth’s revolution around the sun, I do love the idea of new beginnings. So my five biggest goals this year are: to graduate with my PhD (!!!), travel like a crazy boss after I do, get a spanking awesome job that makes me happy (but hopefully also pays the bill), publish something, and give this blog an awesome facelift. Oh, and do something completely outside of my comfort zone that I have never, ever ever imagined doing before. So I guess that makes six!

Since every set of New Year’s resolutions deserves to be commemorated with amazing food–you know, to keep you fueled and focused!–I’m sharing my favorite caramel flan recipe of all time with you. It’s dense, creamy, and rich: think a cross between traditional flan and a really bomb cheesecake. Plus that glossy caramel coating on top is to die for (and super easy to make)!

All you’ll need for this recipe are six ingredients: sugar, cream cheese, eggs, sweetened condensed milk, evaporated milk, and vanilla. Beat them together (except the sugar, which you’ll be melting to create that caramel), and you’re just a few hours away from your resolution of ETERNAL FLAN-INSPIRED HAPPINESS! Muahahaha.

I’m taking a break from talking your ears off about my Europe trip today to tell you all about what went down this Halloween weekend with this mm-mazing Creamy Tomato Penne Pasta with Jalapeno Poppers! (Which, I suppose, is Italian food, so I suppose we’re still talking about Italy today. Bite me, Italy rocks.)

This weekend we invited over our new “global siblings” family for a Halloween potluck & party. The fam is part of a program that helps international and domestic students connect throughout the year in an open, welcoming environment, and this year Anson & I are co-coordinators for our 30-sib group! About twenty of us crammed ourselves into my cozy apartment on Saturday night, dressed to the nines in pirate gear and oblique Game of Thrones costumes involving dragons. We all had such a blast, getting to know each other and mingling and chowing down and, in typical grad student fashion, drinking. Four hours prior, however, the fun had already begun–A had brought his bluetooth speakers and we were jamming out to 80s dance music in my kitchen while exchanging costumes (I was young Ellie from Up, he had a kangaroo onesie) and cooking up a storm with this bomb-amazing pasta!

Of all the places I visited in Europe, my favorite place by far was Edinburgh, Scotland. A buzz of excitement radiated through the city, palpable from the moment our 2-hour train from York pulled into the old station. We had timed our visit to coincide with The Edinburgh Fringe Festival, the world’s largest art festival where thousands of artists converge every year to perform, sing, dance, make you laugh, make you cry. During our five days in the city, my sides split with laughing at the sketch troupe Daphne’s Second Show, a Cambridge trio that wove together hard-hitting humor with physical comedy, seamlessly transitioned sketches, and surprisingly impressive three-part harmonies. My heartstrings wavered and melted at I Love You Because, a loosely Pride-and-Prejudice-based modern musical about two couples who learn to love another not in spite of their flaws, but because of them. On our last night there, my heart both broke and mended at Liam Williams’ Travesty, a stunningly executed, intimate play about two people who learn to navigate the murky path through love, relationships, expectations, and commitment.

Art, like food, has always resonated with me differently at different times in my life. While I’ve shared some of the best moments from my vacation in the UK so far, not all of the trip went smoothly. I arrived in England to a welcoming household, and a partner who felt strangely distant; as the days went on, the sense of disconnect and aloofness only intensified, especially when I saw how warm and animated he could be with his family and friends from school. By the time we reached Cambridge on our fifth night together, I was crying on the bench outside a banquet afterparty while trying to book a last-minute room at the London Travelodge (we didn’t have anywhere convenient to stay the next night) and wondering what on Earth I was doing in England at all.… Read more

Knickerbocker Glory

Harry had the best morning he’d had in a long time. He was careful to walk a little way apart from the Dursleys so that Dudley and Piers, who were starting to get bored with the animals by lunchtime, wouldn’t fall back on their favorite hobby of hitting him. They ate in the zoo restaurant, and when Dudley had a tantrum because his knickerbocker glory didn’t have enough ice cream on top, Uncle Vernon bought him another one and Harry was allowed to finish the first. 

Harry felt, afterward, that he should have known it was all too good to last.

You didn’t think I was going to talk all about my time England and NOT blabber on about Harry Potter, did you? Naive Muggle fools! Muahahaha.

Traveling through the UK was like walking through the pages of all of my favorite children’s books. I got to visit castles that looked just like Hogwarts, Kensington Gardens (the birthplace of Peter Pan), and even King’s Cross (including the real Platform 9 3/4!). Now that I’m back, I cannot wait to pay these favorite books another visit while imagining them taking place at the very spots where I stood!

Knickerbocker glory is probably my favorite single food item from the HP series, immortalized in a line about Dudley throwing a tantrum “because his knickerbocker glory didn’t have enough ice cream on top” (anybody who knows me at all also knows that I love quoting that line in everyday conversations about ice cream). Until I traveled to the UK last month, however, I had never tried the famed treat–which, of course, only hardened my resolution that I would do so in the native land that had popularized it. For the first time ever, I celebrated my birthday a few weeks ago in a foreign country. I was feeling a bit nervous because I was far away from home, family, and friends–I had arrived in London only two days before, and both days had been packed with touristy (and wonderful!) but tiring activities, including a day-early birthday surprise of 4 o’clock tea-and-champagne time. Thankfully, I had given up any claims to local trip planning already and was more than happy to go along with the plan for the next day, which involved a visit to nearby Leeds Castle in Kent and a very British plan to picnic on the rolling green lawns under the rare English sun. As it turns out, the California sunshine followed me to all but two days (both spent in Edinburgh) of my visit to the UK and Ireland, so I wasn’t complaining!

One of the things I loved most about my visit to Europe is the pace of life there. We spent that entire day in sun-kissed bliss, strolling around the castle and meandering around the rolling green lawns and doing nothing in particular. It was such an unexpected change from the usual hubbub of invitations and surprise parties and planned outings that I couldn’t help but feel glad that I had decided to book an early August flight to the UK, despite all of my earlier reservations about spending my birthday abroad.

Another lovely surprise that I hadn’t anticipated was the homemade Victoria Sponge Cake that arrived on the patio table after dinner that evening! A candle was already lit on top–I made a wish and blew it out, opened a card, and felt that little wriggle of happiness in my chest that only a really pleasant and unexpected surprise can inspire. By that time, the birthday wishes from back home were also flooding my way through social media and my (thankfully unlimited) international texting, and we spent the rest of the night in the forest-lined backyard, watching shooting stars from the Perseid Meteor Shower light up the starry black night sky.… Read more

Steamed Strawberry Coconut Poke Cake for More-than-just-a-Mother’s Day!

Even as recently as high school, I recall taking it for granted that my mom’s identity was somehow singularly defined by motherhood – that, according to some unwritten and tacitly understood code of universal maternity, mothers were defined not by the lives they had led up to the moment of our births, but rather by their relationship to us, their children.

To me, my mom – my smart, sharp, wonderful, supportive mom – was therefore first and foremost a mother. Any other role she happened to inhabit – worker, wife, daughter, aunt, friend, sister – was incidental, almost like an afterthought meant to amplify her ability to continue to be, in my mind, the best mom in the world.

It really wasn’t until grad school, a period when I finally started coming into my own and following some of the paths I had laid out for myself, that I learned the most valuable lesson about her: not only is she more than a supporting actor – she’s a dreamer, a visionary, an enabler, and one heck of a strong woman in her own right.

In the grand scheme of things, I’m not surprised it took me so long to realize this. Growing up, I distinctly remember telling my mom that I would one day become a famous actress, to which she replied: “It’s fine to think about – but don’t get your hopes up.” Never one to mince words or sugarcoat the truth, my mom was (and still is) undoubtedly a realist, and this fact made it difficult for me to perceive how, at the core, she was also the greatest dreamer I have ever known.

The BEST Bread Pudding for #OXOCookware

So my latest trip to Disneyland proved that I am the queen of not being able to spot celebrities, ever. Period. Even when I pass by them so close I actually have to maneuver to avoid hitting them in the ribs with my elbow.

Two nights ago, we paid the Happiest Place on Earth a fond visit to celebrate–along with other annual passholders–the 20th anniversary of the Indiana Jones ride. Twenty years. Geesh! I still remember when the attraction first opened and they still handed out those little flimsy AWESOME decoder cards where you could read the ancient runes on the walls while you waited.

Anyway, one of my friends hadn’t eaten anything the entire day. It was past 9 PM when we arrived at the park, so I decided to go with her to grab a bread bowl from New Orleans Square. Of course, she was so hungry at this point that I could barely do more than dodge through the crowds and keep her bobbing head in sight through all the moving bodies. At one point she screeched to a grinding halt and ducked behind a group of folks taking pictures–naturally, I sped up, swerving dangerously close to the subjects of the photo on my right as they arranged themselves. It wasn’t until I had already hopped between them and the camera that my friend grabbed me by the arm, yanked me around, and pointed to the guy in a black and white checkered shirt whom I had nearly decapitated with my elbow a second earlier.… Read more

I love food festivals for many many good reasons, the best of which are 1) food, 2) eating, and 3) more food. In close fourth comes the company: there’s something oddly liberating about connecting with new people through the miracle of face-stuffing, ith delicious globs of cream dribbling down the side of your face as you and the stranger standing next to you rave over the ah-MAY-zing pie you both just tried.

Do you love coffee too? you ask. Cream pies are the best, right? he responds. What about that coffee crunch though? Isn’t it amazing? Are you going to finish that slice?

A few weeks ago, my friend sent me info on a pie contest that a local radio station was going to host. Of course, I was 110% excited, because I love pies. Eating an entire cake sounds like a terrible idea, but there is nothing more comforting on an autumn evening than snuggling up in your loveseat, inviting an entire Costco-sized pumpkin pie onto your lap,  and eating the whole thing right up after a long swim meet.

Topped with a general scoop of homemade Biscoff meringue ice cream, if you fancy like dat.

After tons of debating and wiffle-waffling and probably more anxiety than necessary, I finally decided to adapt one of my favorite dessert recipes and create this Deep-Dish Tiramisu Pie with Coffee Crunch Crumbles. I slapped in a vegan shortbread chocolate chip crust, whipped up some rummy tiramisu filling, layered it with store-bought ladyfingers, dusted the top with cocoa powder, then topped the whole shebang off with this tricky but mind-blowing coffee crunch crumble, which was inspired by this famous Blum’s Coffee Crunch Cake copycat recipe.

When I found out about the #cheesecakeday round-up these wonderful bloggers were doing on Facebook, I was thrilled, hungry, busy–and extremely nervous. It was Thursday, and I had exactly 6 days to develop, make, photograph, edit, and write about the perfect recipe. Six days. What’s a girl to do with six measly cheesecakey days, I ask you?

I hope you realize that question was a rhetorical one.

Make a damn good seven-layer fusion cheesecake…that’s what. This may be my favorite cheesecake, ever. Period.

This cheesecake was born of an innocuous Friday night conversation over two plates of free Jewish diner cake. My friend and I had just watched Boyhood in theaters, so by the time we sat through 180 minutes of angst-laden adolescent and walked out at 10:30 PM, of course we had a big bad case of the HANGRAYS.

Luckily, our movie tickets got us free dessert with the purchase of a meal, so we ordered up a storm from the menu and promptly terrorized the bakery manager by raiding the huge desserts display outside the restaurant. This place has everything–red velvet cake, blackout cake, decker cake–but most of all, it had German chocolate cake, at which point I was all like “OH YEAH I LOVE THAT STUFF IT’S TOTALLY MY JAM Y’KNOW.”

Italian Cream Layer Cake {and some THOUGHTS)

There are several reasons for the delay in this post–and I promise, I have been dying to share some of my latest recipe creations with you folks, because they are A+ crowd-approved. But this is going to be a fairly serious post. If you want to skip straight to the photos and recipe at the end because you’re not prepared for a Debbie Downer kind of post, I won’t be offended. Promise. (Plus, I have no way of actually knowing, so take your virtual anonymity and run with it.) And despite the lack of attention it’s going to get here, this Italian Creme cake is actually really, really amazing. Again, more about it in the recipe box below.

We had two major losses in our lives last week–one member of our family, and one dear, dear friend passed away. So we have been understandably busy attending the memorials and services, not to mention grieving. They will be missed dearly.
As with any major loss–especially a first loss–I have spent a considerable amount of time thinking. About life, but also about a lot of things you wouldn’t think you’d think about when everything’s so crazy you just don’t have time to stop and…think.

When I started this blog one year ago, I wasn’t sure what I wanted to accomplish. To a certain extent, this is still a question that hangs over my head every once in a while. I love creating great content, I love writing, I love making and sharing my food adventures, and I sure as heck love every single ounce of support I get from all of my friends, family, and–of course–you, readers. But this is also in many ways a self–and therefore selfish–blog, and it offers an outlet for my thoughts in a way that I don’t always get in the “real world,” talking to “real people” for whom I feel held accountable to explain myself.
