I’ve been in Australia and New Zealand many times, and those cookies are all over in many different variations. I have a recipe that will terrify you when you make the dough as it’s made unlike any other cookie ever, and it bakes into a thin crispy outside and chewy inside, AND, I have NEVER made enough…not once…no lie. I’d take them to the office and people would STEAL them, hide them in their desks so as not to look the glutton, and my boss had NO fear OR guilt in snatching the last one – in front of a crowd. For an otherwise very nice man, he had a wicked laugh with that last one. I’m happy to share it if you like as it goes back generations in the Brisbane area.
