National Eat Dessert First Month Challenge Day 5: Ice Cream Sundae

It’s the fifth day of National Eat Dessert First! Month, an entire 31 days dedicated to a different themed dessert but, more importantly, getting those desserts onto our plates and palates! THEMED ENTRY #5: ICE CREAM SUNDAE WITH BLUEBERRY SAUCE

I was DYING to try this blueberry sauce recipe I found online (http://www.mybakingaddiction.com/homemade-blueberry-sauce-recipe/), and this was the perfect excuse! Now, I live in tropical Southeast Mexico, so blueberries aren’t really abundant; I’m sure fresh ones would have made for an even better result, but since the recipe said it was okay to use frozen, I went ahead and gave it a go.

Another ingredient not-so-readily available in Mexico: lemon. So lime it was. I used the same amount of juice, but about 1/4 of the zest, as limes are quite more sour than lemons.

The sauce turned out wonderfully. Also fantastic on pancakes. I think next time I make it I might use a little less cornstarch, though, as it came out a little thick for my taste.
