There are few surer ways to my heart than through an enthusiastic conversation about all things Disney. Heck, if Lord Voldemort showed up on my doorstep tomorrow night and told me he wanted to chat about this 3-year old with cancer who–thanks to the Make A Wish Foundation–will now have the chance to visit Disneyland, I would invite him in and ask him whether he wanted his Mickey Mouse waffles served with maple syrup, butter, or both.

Disneyland is very much an American institution, but it is also a distinctly Californian landmark and experience as well. Conveniently located among the sunny orange groves of Southern California, I grew up visiting the theme park at least once a year–sometimes more, and always with a churro and a chocolate-dipped waffle ice cream cone from Gibson Girl’s Parlor on Main Street. While Disneyland isn’t my hometown (sorrows!), I might as well be an honorary citizen of the old mouse’s town.

I love the whole darn place, but my favorite part has got to be that swelling feeling in your chest when you step onto Main Street for the first time that morning. There’s something incredibly magical and old-timey that just can’t be found anywhere else…especially not with a double-scoop from the parlor!

This Christmas, for Secret Santa, my cousin gifted me this amazing Mickey Mouse waffle iron, which is ten times classier than anything I would ever buy for myself. Actually, it only costs $20–but if you know me at all, you’ll know that I am a total appliance prude. Pans? Dozens. Useless utensils and kitchen tools? By-the-drawerful. But appliances?

Every single one of my appliances has been gifted to me. Food processor, blender, hand mixer, and now……cue contented sighs, because this waffle maker is the best thing that happened to me all last month. In addition to being non-stick (read: a cinch to clean!), it’s efficient and has an adorable glowing blue Mickey indicator that lights up when your waffles are ready!

And let’s face it: if you can’t make it to Disneyland, what better way to start Sunday brunch than with a homemade Mickey Mouse waffle using a classic, fluffy, I’m-coming-back-for-fifths recipe?

Or, if you’re like me, you can, you know, just make a batch of these before you head to Disneyland tomorrow morning. Not that I am. Except I totally am. Hallelujah and praise be my hometown: Disneyland, CA!

M-I-C-K-E-Y M-O-U-S-E! Start your day off with the most adorable and magical waffle this side of Main Street! If you don't have a Mickey Mouse waffle iron, though, don't worry--you can still make this fluffy and absolutely delicious classic waffle recipe in a regular waffle maker!


  • 2 eggs, room temperature
  • 1 3/4 cups milk or soy milk
  • 1/2 cup coconut oil, melted
  • 2 cups all-purpose flour
  • 1 tablespoon white sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract


  1. Preheat your waffle iron (Mickey or not!).
  2. In a large bowl, beat eggs, then add remaining ingredients and beat in until just smooth, with no clumps remaining.
  3. Using a measuring cup, pour enough batter evenly into the iron to cover it, then cook until golden brown. Repeat until you have used up all of your batter.
  4. Serve with butter, syrup, fruit, or some fun edible Disney decorations! You can also freeze any leftovers in a tightly-sealed zip plastic bag.

  19. I live in the cold State of Michigan but I do love Disneyland and have been there 4 or 5 times and to Disney World 2 or 3 times. It is always a great time. Our cousin lives in Manhattan Beach so when we visit her it is an easy hop, skip and jump to Disneyland. Thanks for sharing your hometown waffles with us.

  40. Wow, I love when you get gifts you would never get for yourself, but that you can actually USE! Those are the most adorable pancakes.
