Apple Dumplings 2--102315

Apple dumplings. Have you tried them? LOVE.

If you’re down for a classic treat that will be a repeat offender at your annual holiday gathering, this is the one. My cousin makes at least two pans every year and it’s always one of the most clamored-over desserts at the table. In addition to being insanely easy to throw together at a moment’s notice, these delicious morsels are the perfect blend of cinnamon, spice, apple & everything nice!

The secrets to this dish are simple: it uses premade crescent roll dough as breading! The sugar cinnamon sauce also contains a surprise effervescent (yay, I’ve always wanted to use that word in everyday writing) ingredient: yep, lemon-lime soda! I went moseying around Target last week during my holiday baking shopping spree and picked up a pack of 7UP TEN®, a ten-calories-only soda (with full flavor) that was perfect for this dessert.  While I was there, I also nabbed a pack of these cute mini 7UP® bottles for my mum, who likes to grab a bottle from the fridge every once in a while when she visits–possibly as she’s munching on these dumplings…

Auto Draft

A staple cookie recipe that you'll use again and again! These crumbly, chewy, and slightly crispy oatmeal chocolate chip cookies are the ONLY ones you'll want, and here's a secret: they only take 15 minutes from start to finish! Adapted from [Half-Baked Harvest|http://www.halfbakedharvest.com/moms-simple-oatmeal-chocolate-chip-cookies-best-oatmeal-chocolate-chip-cookies-around/] and nearly identical to my other [Chocolate Chip Oat Bars recipe|https://www.wallflourgirl.com/2014/01/23/idiot-proof-healthy-chocolate-chip-oat-bars/]

Ingredients

  • 2 1/2 cups oats, old-fashioned or quick-cooking (I used the latter and they worked fine)
  • 2 cups flour (the original calls for 1 cup APF and 1 cup wheat flour; I used 2 cups APF)
  • 1 cup brown sugar, loosely packed
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup canola oil OR coconut oil, melted
  • 2 eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Lightly grease a cookie sheet and set aside.
  2. In a large mixing bowl, throw in ALL ingredients except the chocolate chips. Seriously. Just do it and mix away until a dough pulls together.
  3. Mix in your chocolate chips.
  4. Using your hands, clump together a large spoonful of dough, squeezing and compacting the very crumbly dough (seriously, it'll be crumbly) together as necessary. Place each dough ball carefully onto the prepared cookie sheet.
  5. Bake for 9-11 minutes, until your cookies have set and turned a light golden shade. Remove from oven and allow to cool completely on stovetop (your cookies will continue to "cook" at this step, so make sure you let them cool completely!).
