I mean, just look at that peanut butter pouring down and through that lusciously gooey raw square like so much suntan lotion slathered all over Chris Evans‘s gorgeous body. Who’d want that?

Because you’ll have to devour them before everyone else does and time runs out like a strangely obsessive peanut butter bowl clock, spinning round…and round…and round…

Healthy No-Bake Peanut Butter & Jelly Bars (Raw, Vegan, GF)

Yield: 8x8-inch baking pan

A 15-minute snack that will knock any PB&J sammy out of this world! Raw, vegan, gluten-free, and the only snack you will need around the house all year. Perfect for an on-the-go breakfast, lunch, dinner, dessert, and/or munchie time.

Ingredients

    For the crust:
  • 24 dates, pitted (any variety--I used Deglet Noir)
  • 1 1/4 cup almonds
  • 1/2 cup peanut butter
  • 1/2 ripe mango
  • 1/4 cup dried sweetened coconut flakes
  • For the peanut butter filling
  • 1 large ripe banana
  • 1 cup peanut butter
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • For the jelly:
  • 1 1/4 cup strawberry preserves

Instructions

    For the crust:
  1. In a food processor, chop all crust ingredients until they form a sticky paste that holds together when pressed lightly together. Set aside.
  2. For the peanut butter filling:
  3. In food processer, blend all ingredients until thick and smooth.
  4. To assemble:
  5. Line an 8x8-inch baking pan with foil.
  6. Press half of the crust evenly into bottom of foil-lined pan.
  7. Pour peanut butter filling evenly on top of crust.
  8. Melt jam by microwaving it for 15 seconds, then spread on top of peanut butter filling.
  9. Press remaining crust gently and evenly over jam filling.
  10. Refrigerate for at least 1 hour before cutting into squares--they will be very gooey. Or you can ignore what I say and do as I do (which is eat these awesome bars right away without chilling). Store in airtight container in the refrigerator for up to 3 days.

    • Right, Nancy?! Since discovering that nuts and dates (the fruit) make amazing snacks, my stomach has been telling me that doing normal things like dating (the social activity) is nuts. Because seriously, the PB&J&dates lifestyle is so much healthier. Uhh, anyway, that made zero sense. Hope you’re having a good lychee drink kind of Monday!

  7. I don’t really like peanut butter and strawberry jelly (although I’ve tried natural peanut butter and apricot jam/orange marmalade before and those are pretty good), but these look so gooey and tasty, I’d definitely give them a try.
